Italian Crusted Salmon with Creamy Truffle Caesar Salad

1 Clove of Garlic, minced
1 Teaspoon of Lemon Juice
2 Teaspoons of chopped, Fresh Rosemary
1/2 Teaspoon of Honey
1/4 Teaspoon of Salt
3 Tablespoons of Panko Breadcrumbs
3 Tablespoons of finely Chopped Walnuts
1 Teaspoon of Olive Oil
2 Salmon Fillets
NonStick Cooking Spray
1 9.3 ounce Bag of Fresh Express Twisted Caesar Creamy Truffle Caesar Chopped Kit Salad
2 Lemon Wedges (optional)
Heat the oven to 425 F. Line a sheet pan with the Parchment Paper.
In a small bowl, combine the Garlic, the Lemon Juice, the Rosemary, the Honey and the Salt. In another small bowl, combine the Breadcrumbs, the Walnuts and the Olive Oil.
Place the Salmon on a prepared sheet pan. Spread the Mustard Mixture over the Fish, sprinkle it with the Panko Mixture, pressing to adhere. Lightly coat it with the NonStick Cooking Spray.
Bake it for 12-15 minutes, or until the Fish flakes easily with a fork.

Grilled Zucchini Nachos

4 Medium Zucchini, sliced into 1/4-inch thick rounds
1 Tablespoon of Extra-Virgin Olive Oil
Salt, to taste
Pepper, to taste
1 Cup of Cheddar Cheese, shredded

1 Cup of Canned Corn, cooked and drained
1 Cup of Canned Black Beans, rinsed and drained
1 Cup of Tomatoes, diced
1/4 Cup of Green Onions

1 Avocado, diced
1/4 Cup of Cilantro, chopped
1 Tablespoon of Sour Cream
Heat the grill to Medium Heat.
In a large bowl, toss the Zucchini and the Olive Oil to coat. Season it with the Salt and the Pepper, to taste.
Place the Zucchini on a grill pan and grill it for 4-5 minutes until it is just tender. Top the Zucchini with the Cheese and cook it until the Cheese melts, for 1-2 minutes.
Remove it from the grill and place it on a plate or a large platter. Top the Cheesy Grilled Zucchini with the Salad Blend, the Corn, the Black Beans, the Tomato, the Green and Red Onions and the Jalapeño, if desired, the Avocado, the Cilantro and the Sour Cream.
