4 Medium North Carolina sweetpotatoes (about 2 pounds), divided

1 Tablespoon, plus 1 Teaspoon of Olive Oil, divided

1/4 Teaspoon of Garlic Powder

1/4 Teaspoon of Onion Powder

1/4 Teaspoon of Paprika

1/8 Teaspoon of Cayenne Pepper

Kosher Salt, to taste

Freshly Ground Black Pepper, to taste

All-Purpose Flour, for rolling out dough

1 Pound of Whole-Wheat Pizza Dough at room temperature, divided into four equal portions, 4 ounces each

1 Cup of Freshly Shredded Gouda Cheese

4 Large Eggs

1/4 Cup of Diced Chives


Preheat the oven to 400 F. Place 1 pound of the sweetpotatoes directly onto the rack and bake them, until they are soft, about 1 hour. Remove the Potatoes from the oven and let cool for 5-10 minutes. Peel and puree flesh until smooth; reserve 1 cup.


Increase oven heat to 450 F. Peel remaining sweetpotatoes and dice into 1/2-inch pieces. Toss 2 cups diced sweetpotatoes with 1 Tablespoon of the Olive Oil, the Garlic Powder, the Onion Powder, the Paprika, the Cayenne and the Salt and the Pepper, to taste; place in an even layer on a baking sheet. Roast until it is softened but not crisp, 15-20 minutes, stirring halfway. Remove from the oven.


Lightly flour clean, flat work surface. Roll each ball of dough out to about 1/4-inch thickness (about 7 inches diameter).


With remaining oil, lightly coat the rimless baking sheet. Transfer rolled out dough to baking sheet.


Spread pureed sweetpotato over surface of each dough round, about 1/4 cup each, leaving about 1/2-inch border. Top each with 1/4 cup shredded Gouda. Add 1/2 cup roasted sweetpotato cubes, leaving open space in the center of the pizzas.


Carefully crack one egg into the center of each pizza; bake for 15 minutes until crusts are golden brown on bottom, cheese is melted and egg whites are fully set. Carefully remove pizzas from the oven.


Season with salt and pepper, to taste. Top each pizza with 1 Tablespoon of Diced Chives.

1 Minute Hot Honey Chicken Seasoned Rice Cup

1 Pound of Ground Chicken

1 Teaspoon of Salt

1 Teaspoon of Cayenne Pepper (optional)

1/4 Cup of Breadcrumbs

4 Hoagie Rolls

2 Tablespoons of Butter

4 Slices of Provolone Cheese

Garlic Sauce, for garnish


Preheat the oven to 375 F. Heat the rice according to the package’s directions.


In a large bowl, mix the Rice; the Chicken; the Salt and the Cayenne, if desired and then the breadcrumbs.


Use a cookie scoop or hand roll the Chicken mixture into balls. Place them onto the aluminum foil-lined sheet tray, leaving a small space between each ball. Bake for 25 minutes, flipping meatballs halfway through.


Slice hoagies in half, lengthwise. Remove some bread from the middle to make room for meatballs. Butter inside of each hoagie and place on a sheet tray.


Once meatballs are cooked through, turn the broiler on high and place buttered hoagies in the oven. Cook for 1 minute, or until butter is melted and hoagie has browned.


Remove hoagies from the oven, place 3-4 meatballs inside (depending on size) and cover with a slice of cheese. Broil on high for 30 seconds to melt the cheese.


Drizzle the Garlic Sauce on top.


Tip: Garlic Sauce can be substituted with topping of choice.


Hot Honey Chicken Rice Crackers and Ranch Dip

Prep time: 5 minutes

Cook time: 20 minutes

Servings: 2


1 Minute Hot Honey Chicken Seasoned Rice Cup

1 Cup of Sour Cream

1/2 Packet of Ranch Dip Seasoning


Preheat the oven to 400 F. Heat the rice according to the package’s directions.


Lay the rice on the parchment paper. Place another sheet of parchment paper on top. Use a rolling pin to roll out rice into a thin layer.


Bake for 20 minutes.


In a medium bowl, mix the Sour Cream and the Ranch Seasoning.


Once the crackers are cooked, cut them into squares while they are still hot and allow them to cool.


Serve the Crackers with the Ranch Dip.


Tip: Ranch dip can be substituted with hummus or any flavored dip.
