Florida Honey-Goat Cheese Crusted New Zealand Lamb Rack


Dish Ingredients (Serves 4)

2 Each 14-16 Oz. New Zealand lamb Racks


Crust Ingredients

3 Oz. of Bread Crumbs Plain

2 Oz. of Florida Wildflower Honey

1 Oz. of Dijon Mustard

4 Oz. of Goat Cheese Soft Chevre

1 Each egg yolk

Salt and Pepper to taste


Lamb Rack Marinade ingredients

3 Oz. of Extra Virgin Olive Oil

1 Oz. of Dijon Mustard

1 Oz. of Chopped Fresh Rosemary

1 Oz. of Chopped Fresh Thyme

1 Oz. of Chopped Fresh Oregano

1 Oz. of Fresh Orange Zest

Salt and Pepper To Taste


To Prepare: Mix all of the marinade ingredients well, pour them over the lamb until it is well coated on all sides, let it marinate from 4 hours up to overnight in the refrigerator. Mix all of the crust ingredients until they are well combined. Preheat the grill to 500 degrees. Cook the lamb rack over the open flame until it is an internal temperature of 145 degrees. Let the lamb sit until it comes to room temperature. Crust the top of the eye of the lamb rack with the goat cheese crust. Bake it at 350 degrees for 10-15 minutes until the crust is golden brown and the internal temperature of the lamb is 160 degrees.
